CHEWY CHOCOLATE PROTEIN & PEANUT BUTTER FUDGE

3/4 cup peanut butter (no salt or sugar added)
3/4 cup honey
1 tsp vanilla extract
1/2 cup chocolate protein powder
1/3 cup pecans, roughly chopped
1/3 cup dates, pitted
Line an 8×8 inch pan with foil and spray with nonstick cooking spray.
Roughly chop the dates and roll each of the date pieces into individual small balls.
In a sauce pan over medium-high heat combine the honey, peanut butter and vanilla. Whisk mixture together until smooth and thin, about 5 minutes. Tu off heat and stir in the chocolate protein powder. Add in pecans and dates and mix until incorporated. Pour the mixture into the prepared 8×8 inch pan. Cover and freeze until firm, about 30 minutes. Allow to slightly thaw at room temperature before cutting into 16 squares.
Store fudge squares in the freezer and thaw for 5 minutes before eating.
